Peanut butter & chocolate dipped cupcakes

We’ve had a bit of heartbreak in our house this weekend – our wonderful little Norman passed away.

Norm was an integral part of our little family, so we’re feeling a little miserable at the moment – for such a tiny critter, she made a huge impact on our lives and her absence has left our house feeling pretty empty. There’s a lot of silence – no snuffling, clinking of her water bottle, or thumping as she has a scratch. It’s too quiet for our liking.

As a four year-old rat she was a bit of a marvel. Not only is four rat years around 200 human years, she also conquered everything from colds to tumours! We had a few scares with her over the years resulting in several late-night sprints to the emergency vets, but in the end it was age that took her – she was her usual snugly self on Thursday night, then when I went to wake her up for a play in the morning she was gone.

Ugly Peanut Butter Biscuits

There’s no denying my love of all things peanut butter – on toast, with carrots or in baking, I’m a happy critter whenever there’s peanut butter around! While I’m not particularly fussy about how I get my peanut butter fix, there’s one combination that’s just that little bit better than the rest… you guessed it, peanut butter and chocolate!

You’ll notice there are quite a few peanut butter and chocolate recipes hanging out in the recipe index. But after while perusing the confectionary aisle at the supermarket this weekend I realised a shocking fact – despite all the peanut butter creations on my blog, there aren’t any featuring Whittaker’s peanut butter chocolate!

This was a pretty horrifying fact considering how much I love that chocolate. So I decided to make things right and come up with a simple, decadent and totally delicious recipe that uses it. That’s where these biscuits come in – ugly peanut butter biscuits!

Well, did you know that with just a few ingredients you’re bound to already have in your pantry you can whip up a delicious mug cake – a flavoursome, warm cake for one that’s mixed, baked and eaten straight from a mug.

This recipe for chocolate and peanut butter mug cake is my absolute favourite – it’s warm, chocolatey and moist with a delicious, creamy peanut butter surprise tucked away in the middle. Not a fan of peanut butter? Don’t worry, just leave it out – the cake still tastes amazing.

Oreo & peanut butter stuffed brownies

While perusing the supermarket aisles for baking inspiration, Kevin came across a pretty awesome special – five packets of Oreos for $5. Before we knew it our basket was laden with Oreos and I was left to work out what on earth I was going to do with them.

It wasn’t easy – this one didn’t come from a flash of inspiration – but after a little hunting on Pinterest I came up with something I wanted to try… combining a peanut butter and Oreo stack with an individual sized brownie.

The result? Oreo and peanut butter stuffed brownies. Yip, the Oreos were smooshed together with a generous helping of peanut butter and baked inside a rich chocolate brownie.

Pretzel & peanut butter bites

One of the very first things I shared on High Tea with Dragons were peanut butter bites – soft balls of peanut butter dipped in chocolate. Simply put, they’re delicious. But one of the best things about the recipe is how quick and simple it is – whether you’re a novice or master baking, they’re an absolute cinch.

Today’s recipe is a twist on that fail-proof recipe, using pretzels to bring a subtle saltiness to the peanut buttery goodness. Intrigued? You should be! These bite-sized treats are made from a combination of finely crushed pretzels and peanut butter, with the pretzels giving them just the right amount of saltiness and crunch while the peanut butter gives them smoothness and flavour.

You might be a little sceptical about combining pretzels and peanut butter – I know, I’ve been there too. But somehow the combination works – the flavours really do complement each other perfectly, giving you the best of both worlds in one treat.
