One of my favourite things to make at Christmas growing up were Mallowpuff chocolate puddings. You know the type – you drizzle a little white icing on top of a Mallowpuff, pop on a Jaffa and Spearmint leaf and you’re all finished! Super easy, super cute, and super festive.

Despite being significantly older now, the novelty of miniature Christmas treats has far from worn off. So this year I decided to make a slightly more grown up version of these Christmas treats – one that involves (ever so slightly) more preparation than opening a packet of biscuits!

Oreo Truffles

Today’s bakeless treat is a super simple one that you’ve likely seen (and tasted) before… Oreo truffles! I didn’t have the exact recipe she used on hand so I just muddled along, drawing on my mint slice truffles for inspiration. Luckily there’s not really anything you can do wrong with these little treats – it’s literally three ingredients! Well, plus sprinkles – and you definitely need sprinkles for added fun factor.

The process is simple: mix together Oreo crumbs and cream cheese, roll into balls and dip in chocolate. Not hard to master, right?

Makes approx. 30 truffles

Ingredients

  • 450g Oreos (3 packets)
  • 250g cream cheese, cubed
  • 375g milk chocolate melts
  • Sprinkles (optional)

Method

  1. Place Oreos in food processor and blend until ground to a fine crumb. Add cream cheese and pulse until well combined and mixture clumps together.
  2. Roll mixture into small balls and place on lined baking tray. Place in fridge to firm for approx 15 minutes.
  3. Melt milk chocolate melts in microwave in 30 second bursts, mixing between each. Dip each truffle in chocolate using a fork, tapping off excess before replacing on lined baking tray. Finish with sprinkles.
  4. Place in fridge to set completely.

Oreo Stuffed Chocolate Chip Cookies

Life is pretty crazy around here at the moment. In just two weeks time we will be moving house (again) and I’ll be starting a new job – what a mammoth couple of days that will be! Combine those big life changes with planning our wedding (which is now just four months away), other commitments and general life, it’s fair to say we’re a busy little household.

When things get this busy it’s easy to forget about making time for yourself – and for me, that means baking and blogging! While Kevin’s great about ensuring we always set a bit of time aside, the amount of time available has become a bit scarce. I’m sure you can guess what this means – I’ve been on the hunt for quick and easy recipe ideas that pack a punch!

Today’s recipe is all that and more – it’s cookie-ception; a cookie within a cookie. I’m sure you’ve seen these floating around the internet for awhile now, but I’ve finally given them a try – Oreo stuffed chocolate chip biscuits! YUM!

Oreo & peanut butter stuffed brownies

While perusing the supermarket aisles for baking inspiration, Kevin came across a pretty awesome special – five packets of Oreos for $5. Before we knew it our basket was laden with Oreos and I was left to work out what on earth I was going to do with them.

It wasn’t easy – this one didn’t come from a flash of inspiration – but after a little hunting on Pinterest I came up with something I wanted to try… combining a peanut butter and Oreo stack with an individual sized brownie.

The result? Oreo and peanut butter stuffed brownies. Yip, the Oreos were smooshed together with a generous helping of peanut butter and baked inside a rich chocolate brownie.
