Hazelnut and Chocolate Cake

Birthdays are great for so many reasons – you get an entire day to celebrate someone for just being themselves, it’s a good excuse for a party and bubbles, and it’s a great excuse to eat cake! Whether it’s my birthday or that of someone else, birthday cakes are a bit of a big deal for me – I love dreaming them up, making them come to live and (of course) enjoying the finished product.

It was Kevin’s birthday last weekend, and while I spent weeks teasing him that I couldn’t be bothered making him a cake, there was no doubt I’d make him something special. So while he spent the day lifting weights and being fit at a Crossfit competition (as you can tell, I clearly know all the ins and outs of the sport!), I got busy whipping up a special cake to surprise him with when he got home.

Like many people, Kevin’s BIG on chocolate – he loved it way more than I do! So it was a no-brainer that his birthday cake would be absolutely packed with chocolate. But that in itself isn’t particularly special, so I decided to work hazelnuts into the recipe.

The result? A triple-layered chocolate cake infused with hazelnut coffee, stacked and iced with whipped milk chocolate buttercream and finished with a halo of crushed toasted hazelnuts. YUM.

25 Years and Counting

Now Kevin and I are nicely settled in our new home with the kittens we love any excuse to have people over – after all, if you bought a house you should spend as much time there as possible, right?

And what better excuse than a birthday! My 25th birthday is just around the corner (only two sleeps to go!) so we decided to have a few friends over to celebrate with dessert and drinks. I’m sure you know what that means – I got busy in the kitchen and did a lot of baking!

I decided to go with a pink and gold theme for the dessert table, with splashes of white to balance things out, so came up with a menu to suit – think cupcakes, doughnuts, cookies and (of course) cake!

Some people celebrate life events with champagne, but around here we celebrate with cake. For each of our big life moment celebrations there was a special cake perched on a stand somewhere just waiting to be enjoyed – like this ombré rose cake for our engagement, and of course, our fabulous wedding cake.

So when it came to marking the milestone of buying our first home, a cake was at the top of the list of things to organise for our house warming. As I unpacked my baking supplies last week my mind was abuzz with ideas of what to make – what size, how many layers, what flavours, and (of course) how to decorate it.

After realising just how little free time we had ahead of having friends over on Saturday, I decided to keep it simple and layer together a couple of chocolate cakes. The interesting part came with the icing – my favourite vanilla bean buttercream went out the window in favour of a beautifully creamy salted caramel buttercream which was used both as a filling and a topping. Happy Monday!

Wow, what a beautiful weekend – just perfect for celebrating Mother’s Day in the sunshine. Unfortunately Kevin was ill this weekend so we didn’t head out and enjoy the great weather, instead relaxing and recuperating at home. But excitingly we finally bought our own Nespresso machine – I’m so in love with it I was wishing Monday morning would come faster so I could make another cup.
