Summertime Slice

Baking is a little less inspiring in summer. With the weather so warm already, the last thing you feel like doing is switch on the oven and fill the house with even more heat! This is especially true of the little unit we’re in at the moment – while it’s freezing in winter, it’s absolutely baking in summer and traps the warmth from every ray of sunshine that comes near it. I don’t think we’d survive with without the fans we have dotted around the place.

Because of this, I have a handful of great ‘go-to’ summer-friendly recipes – many have already been shared with you (like the Jelly Whip and lemon slice). But I’m always on the look out for new ones and on my travels of the blogosphere the other day I found one that caught my eye on the local blog, Baking Makes Things Better.

It’s called Jelly Slice, and yes, it is as amazing as it sounds – a crushed biscuit base is topped with a layer of jellified condensed milk and finished off with a layer of (you guessed it) jelly! As soon as I saw it I knew I had to give it a try – not only do the combination of colours looks fantastic, but the flavours sung straight to my heart (condensed milk and jelly being two of my very favourite things).

What I loved about the recipe is how simple and quick it is. Despite being made of multiple layers that each need to chill and set before the next can be added, the slice is really fast to make (and definitely takes very little effort).

Basically all you need to do is crush some plain biscuits, mix in some melted butter so it binds together, then press into a pan and chill. Next, mix together condensed milk with gelatine and lemon juice, pour over the base and chill. Finally, whip up a packet of jelly, add a little extra gelatine, pour over the base and chill. Voila! What makes this slice even more perfect for the summer months is how refreshing it is – each bite has the same effect as digging into an ice cream or chilled dessert. It cools you down, gives you a boost of energy and leaves you rearing to go (and lay in the sun some more).

    This slice is easy to make and doesn’t actually require any baking, just a whole lot of leaving things to chill in the fridge. Easy. This slice would be great for kids parties; I used blackcurrant jelly but you could always use a green or blue jelly for a bit of colour and fun.

      Glad you like it! You’re totally right, this is a great recipe for kids and you can make it fit so many different occasions by using different jellies :)
