Peanut butter slice



For the base:

  • 1 pack of superwine biscuits, ground to a fine crumb
  • 225g butter, melted
  • 1 cup peanut butter

Note: I added one cup of rice bubbles to give the slice some crunch. If you want to do this, simply use a little more peanut butter.

For the topping:

  • 125g chocolate (I used ½ a Whittaker’s block)
  • 4 Tbsp peanut butter


  1. Place the superwine biscuits into a food processor and grind to a very fine, almost flour-like crumb
  2. In a large bowl, mix together the biscuit crumb, melted butter and peanut butter until well combined. Mix should not be sticky, but more like a biscuit dough.
  3. Press crumb mixture into a greased or lined tray.
  4. Place the chocolate and peanut butter in a bowl and microwave until melted, stirring every 20 – 30 seconds. Once melted, mix together until smooth before pouring over biscuit base.
  5. Set in fridge for at least one.

    This slice looks great my best friend is a peanut butter addict so I will be making this for her. You did mention the need for a good ginger crunch recipe and I have one that turns out great even when I get lazy. Only tip would be to always double this recipe, It will make the perfect amount that way. :)
    Ingredients for base are:
    125 g butter, softened
    1/2 cup sugar
    1 1/2 cups standard plain flour
    1 teaspoon baking powder
    1 teaspoon ground ginger
    For Icing:
    75 g butter
    3/4 cup icing sugar
    2 tablespoons golden syrup
    3 teaspoons ground ginger

    1. Cream butter and sugar until light and fluffy.
    2. Sift flour, baking powder and ginger together.
    3. Mix into creamed mixture.
    4. Turn dough out onto a lightly floured board. Knead well.
    5. Press dough into a greased 20x30cm sponge roll tin.
    6. Bake at 190C (375F) for 20-25 minutes or until light brown.
    7. When there is about 5 minutes of cooking time left, combine butter, icing sugar, golden syrup and ginger.
    8.Heat until butter is melted, stirring constantly.
    9.Pour hot ginger icing over base while hot and cut into squares before it gets cold.
