Delicious Doughnuts
I guess no matter how old you get, you never grow out of pretty, colourful treats – or is that just me? I’m a sucker for anything iced or covered in sprinkles – it doesn’t matter if it’s a cake, biscuit or bun, if it’s iced and sprinkly I’m all over it. Make the icing pink and I’ll be totally in love with it.
But sadly, pink icing and sprinkles aren’t the foundation of a good diet (if they were I think we’d all be a bit happier). Since returning from America a little round around the edges I’d been super good the past few weeks and nothing iced or sprinkly had made it past my lips – a big challenge for someone baking several times a week!
Then on Thursday – Valentine’s Day – the coffee shop down the road had beautiful cupcakes piled with pink icing and doused in sprinkles. It took everything I had (aided by my bank balance) not to add one to my order. But that resistance broke the Kirsten camel’s back and I decided this weekend an iced, sprinkled feast was in order. Cue brainstorming.
It wasn’t until yesterday that I decided what I wanted to make… homemade doughnuts. The trick? I didn’t want to fry anything. I don’t know why, but the thought of frying things at home makes me uncomfortable – I guess it’s an unhealthy line I just don’t want to cross. After a bit of hunting, researching and amending I came up with this recipe for homemade baked doughnuts.
While it may seem like a time consuming recipe, it’s actually surprisingly easy as there’s lots of waiting involved thanks to the yeast. Here’s what my day looked like:
Make dough. Knead dough. Put in bowl. Cover and leave in sunny spot. Clean bathroom. Drive halfway across town for an appointment. Swing by the mall. Grab a coffee. Drive home. Roll out dough. Cut doughnuts from dough. Place on tray. Cover and leave in sunny spot. Sing along to Wicked soundtrack. Look up what symbols on new oven mean. Read in the sun. Pop tray of doughnuts in oven. Turn Wicked on again. Remove from oven. Place on cooling rack. Mix up icing. Ice doughnuts. Add sprinkles. Take copious amounts of photos. Eat a doughnut (or two). Write blog.
Yip, it’s been a lazy and indulgent Sunday – I’m a very happy critter – and the doughnuts have totally topped it off. They’re fluffy, perfectly doughy and sweet without being too sweet. As an avid fan of the colour pink, I simply can’t imagine prettier doughnuts – though now I think of it, they do look a bit like they stepped out of an episode of The Simpsons!
The best bit? They’re so good you can hardly tell they haven’t been submerged and cooked in oil.
