Christmas is just around the corner, which means now’s the time to start thinking about all the beautiful treats you’re going to bake this festive season. Seriously, it will be here before you know it!

One of my favourite things to whip up over the festive season is White Christmas. Not only is it one of the quickest things ever to make, but there are a hundred different twists you can take on it to tailor it to your own tastes – or those of the lucky people you gift it to!

But this particular White Christmas recipe is one of my absolute favourites – it’s just so festive! Think creamy white chocolate packed with chopped glacé cherries, blanched almonds, pistachios and a few rice bubbles for extra crunch. Good, right?

The trick when making something as simple as White Christmas is making sure that the ingredients you use are top quality – think about it, when there are only a few ingredients, you really need each one to pop! That’s where Tasti comes into the mix!

Tasti’s range of glacé cherries and nuts are my go-to each Christmas (and let’s be honest, anytime I bake with fruit and nuts throughout the year). You can always rely on their products to be top notch – plus they’re packaged in handy amounts to help make baking easy, with both grams and cup measures on every pack.

White Christmas
Makes approx 28 pieces

Ingredients

  • 75g Tasti Red Glace Cherries, halved
  • 75g Tasti Green Glace Cherries, halved
  • 140g Tasti Blanched Almonds, broken
  • 140g Tasti Pistachios, broken
  • 2 cups rice bubbles
  • 500g white chocolate, broken
  • 1 tsp vanilla essence

Method

  1. Grease and line a 20x30cm slice tin with baking paper. Set aside.
  2. In a medium bowl, combine glace cherries, nuts and rice bubbles. Stir gently until well combined. Set aside.
  3. Place chocolate in a large pot over very low heat. Stir continuously until melted and smooth. Add vanilla essence and stir until combined.
  4. Remove chocolate from heat and add dry ingredients (I left a handful in the bowl to scatter on top). Stir until well combined and scoop into prepared tin. Press evenly.
  5. Scatter with remaining dry ingredients (if desired). Place in fridge for 2 hours or until set. Slice using a warm knife.

Easter is without a doubt one of my favourite times of year – what’s not to love about four days off work and mountains of delicious chocolate eggs packing the shelves (and let’s be honest, filling my tummy).

One of my favourite things to do at this time of year is come up with deliciously decadent treats that are perfect for enjoying as part of your annual Easter-chocolate-coma, or giving to loved ones as gifts instead of the standard store-bought bits of pieces. Raspberry-crusted homemade marshmallow

Last year I was BIG into making marshmallow – every couple of weeks I’d make another batch, carefully choosing a new flavour to experiment with each time. Because let’s be honest, there’s nothing better than sinking your teeth into a beautiful piece of fluffy homemade marshmallow – it’s an absolute dream.

Then we got married and I decided that making 1,000 (yip, that’s one thousand) pieces of marshmallow to bundle up as favours would be absolutely no problem. The week of our wedding I spent two days trapped in a stinking hot kitchen preparing, pouring, cutting and dusting hundreds and hundreds of pieces of marshmallow. And it did my head in.

Yet when I saw it all packed up into little doily-stamped bags tied with ribbon I almost forgot what a pain they’d been to make – after all, they looked beautiful and people loved them. But even still, that was the last time I made homemade marshmallow – I declared to Kevin as we munched through some on our honeymoon that it would need to be some rather special marshmallow before I did that again.

Now almost ten months’ on, I’ve found that special marshmallow… berry-crusted vanilla bean marshmallow. And it’s delicious. Think light, fluffy vanilla marshmallow that puffs away to the bite coated on one side with crushed freeze-dried raspberries. Yum, huh?

Pineapple Lump Fudge

Ever have those days where you just want to eat something so ridiculously indulgent that it practically spikes your sugar levels just thinking about it? Yeah, me too.

Over the years I’ve made quite a number of indulgent treats (you’ll find lots of them over in the Recipe Index) but there are some that are especially memorable – think russian fudge cupcakes with crushed Russian fudged blended through the icing, salted caramel and chocolate tartlets filled to the brim with homemade caramel, and peanut butter and chocolate dipped cupcakes where the icing is literally encased in a chocolate shell… yum!

I have a feeling that this Pineapple Lump fudge will soon be joining the ranks of these decadent recipes as one of my absolute favourite, indulgent treats – it’s just too good! Not that I’m surprised though – what’s not to love about milk chocolate fudge packed with Pineapple Lumps?

Burrowing Bunny Truffles

Bunnies are as much a part of Easter as eggs, chocolate and hot cross buns, so it only seemed right that they would feature in some of this year’s Easter baking. The trick? Deciding how!

Last year I made these adorable mint chocolate Easter bunnies, featuring puffy little mini-marshmallow tails. And I loved them – there’s just something about rabbit’s tails that gets me every time.

Those bunny-themed treats were super simple, so I wanted to make something a little more interesting this year – you know, jazz it up a bit. With this in mind I decided to make another ‘bunny bum’ treat – Burrowing bunny Oreo truffles!
