I’m not – and never have been – a morning person. No matter how hard I try or how early I set my alarm, I always seem to be in a rush to make it out the door every single morning. Mornings and I just don’t seem to click.
Eating a good breakfast is usually the first thing to go out the window when I’m in the midst of my morning rush. Then as soon as I jump in the car with a coffee in hand I vow I’ll have a good breakfast the next day – which rarely happens!
So when Bürgen asked me to take part in their breakfast challenge I was pretty excited – not only would it be the perfect incentive to finally get my mornings in order, but their new Original Mixed Grain Loaf sounded amazing.
After 30 years of creating their delicious, nutritious Original Loaf, Bürgen decided it was time to take a look at their recipe and create a new loaf packed with everything you love about the original with a bit of a modern twist. And you know what? It’s really, really good!
Armed with a couple of loaves of Bürgen Original Mixed Grain and some other breakfast essentials, I was all set to create a quick, easy and nutritionally balanced breakfast every day for a working week. Here’s how I got on:
You’ve got to start off with something simple, right? Not only was this delish breakfast packed with flavour, filling enough to get me through till lunchtime, but it was super quick to make – perfect for people like me who find mornings a struggle.
Scrambled eggs are one of my absolute favourite breakfasts, so I was pretty excited to get cooking this morning! Made with a dash of cream instead of milk, these scrambled eggs were light, fluffy and totally delicious on a slice of lightly toasted Bürgen Original Mixed Grain – a seriously good breakfast!
I’m not a big avocado fan, but in the name of research (and let’s be honest, because it’s quick!) I decided to include this breakfast staple in my line-up. And while I haven’t been converted to the amazing-ness of avocado (sorry!), the Bürgen Original Mixed Grain totally made this breakfast for me – with just the right amount of crunch and a deliciously nutty flavour, I was one happy camper.
This was a tough morning – one of those mornings where I would usually write breakfast off and throw back a coffee in the car. So I was really proud of myself for sticking to my plan and making a proper, nutritious breakfast of a fried egg on Bürgen Original Mixed Grain toast. I don’t know if I cooked the best fried egg ever, or whether I was just super pleased with myself, but this breakfast was one of the best of the week.
Still pleased with my commitment from the day before, I decided to treat myself to something special for the last day of the challenge – French toast made with Bürgen Original Mixed Grain, topped with crushed raspberries and a little icing sugar for good measure. Not only did Bürgen Original Mixed Grain make delicious French toast, but I could still feel good about indulging in French toast knowing the bread was packed with all the grains and good things you need to start the day. Win-win!
I am very pleased to say that mornings have been a little bit easier since taking on this challenge. While getting out of bed is still a struggle, I haven’t sacrificed breakfast in the name of saving time – and have felt better for it! Be sure to pick up a loaf and try it yourself.
